Salmon in orange and saffron sauce
Ingredients
- 2 generous slices of salmon
- salt, pepper and a little wheat flour
- sliced garlic
- a tablespoon of butter
- a tablespoon of orange juice
- a pinch of saffron
- dill (optional)
Step 1
Take 2 generous slices of salmon and peel and pat with a paper towel to remove excess water. Then season with salt, pepper and a little wheat flour.
Step 2
In the meantime, heat a frying pan in which a little sliced garlic is sautéed and the fish strips are added. After the fish has browned for a few minutes on both sides, place on paper towels to remove excess oil. Remove the oil from the pan or add about a tablespoon of butter to a new pan to melt.
Step 3
When the butter is almost melted, add a little flour and stir, leaving on the heat for about 1 minute. Stir in a tablespoon of orange juice along with a pinch of saffron soaked with 2 tablespoons of hot water. Add the fish to this mixture and simmer for about 5 minutes.
Step 4
Taste and season with salt to taste, and after the heat has died down add a few more tablespoons of orange juice. Finally, after it has rested for at least 1-2 minutes, place the fish with sauce on top on the plate and garnish with dill and garlic if necessary.
